How does this kind of dynamic plate grabbing and flipping compare to the full grip work from pull-ups, deadlift, etc?

They differ in that these are dangerous and likely to injure you. This is a skill, a party piece. No one is recommending that this is something you would do in order to build strength - there are safer and more effective ways to do that
