Then again, don't eat the bread at all and the GI is even better. Of course the GI concept is not without problems

That's interesting and bizarre. I couldn't get the full article, but I'd be curious why the authors think this happens, and whether there are implications for other foods.

Of course, research also shows that placement of white bread into a trash bin, without subsequent removal, also greatly reduces GI.
