I had a crack at my own take on this. I haven't really baked since starting to follow a paleo-type diet a couple of years ago and I miss it!You've helped me to see that carbs have their place and that there's no need to be quite so anti-grain so long as I take care to prepare them properly... so thanks!
Glad to see you baking Chris. I still bake as a treat once in a while. It makes it taste all the better. I mainly make sourdough spelt based Herman Cakes and vary the things I add into it. Making a coconut flour based sponge is ridiculously easy as well.
