Banana Bread.....

I tried some gluten free baking today!  How about this!

It is a buried banana in a banana loaf.  Found it here and can't wait to eat it!  Eggs, oats, banana, coconut, sweet potato and whey protein.

This was the second time I've made it. I absolutely love it! The taste of the buried banana as you say is something special - creamy, sweet and melt in the mouth.

Keep going with recipes like this!

I had a crack at my own take on this. I haven't really baked since starting to follow a paleo-type diet a couple of years ago and I miss it!

You've helped me to see that carbs have their place and that there's no need to be quite so anti-grain so long as I take care to prepare them properly... so thanks!

Glad to see you baking Chris. I still bake as a treat once in a while. It makes it taste all the better. I mainly make sourdough spelt based Herman Cakes and vary the things I add into it. Making a coconut flour based sponge is ridiculously easy as well.
